Here on the island the food scene is exploding! Everywhere you turn more and more people are exploring the possibilities of foods that we can grow, cultivate, and share. One of my favorite farmer stands is run by a warm, and wonderful woman known simply to me as Mrs. Jackson. Her stand is perched right on Centerline Road. Whenever my husband and I find ourselves west of the Airport Road, Mrs. Jackson’s farm stand is a must stop!
She always has some perfect piece of fruit to offer that was born from hard work, sun, and beautiful earth! One week, we were lucky enough to stop by when she had just harvested an endless supply of the most perfect pineapples! Their verdant crowns stood gloriously against their sunshine-yellow, prickled skin. Its amazing fragrance met you, just as you approached the galvanized stand.
This was one of the best pineapples I have ever tasted. It lacked the usual overly acidic taste of most store bought pineapples. It was exquisitely sweet, with deep, rich, caramel undertones. I don’t think I have ever had a pineapple this good. If you look closely, you will see the radial sun burned into its center. Nature’s reminder of the forces that went into creating this perfection! Just one more example of all the beautiful foods we create on our little Rock! Are you packing yet!?
