There was a commercial that said, “Anything nestled in a fluted paper cup has to be good!” It seems to me that nature wanted to so venerate the beautiful pomegranate that it wrapped each of these jeweled speckled seeds in a nest of paper thin membranes– to remind the bearer that this indeed was something very special.
There is something extremely special about the pomegranate fruit. Again, another example of what is possible when the sun, earth, and rain come together to create something so fragrant and flavorful! When these fruits are ripened, I gather them and either seed a bowl full, or squeeze it for the juice. It is excellent in a vinaigrette, or sipped on slowly for your morning breakfast. Full of antioxidants, the pomegranate is yet another example of the amazing wonder fruits we grow on our little Rock!
First, Tanisha, I would like to be your new best friend! The way you express yourself, the colors in your photos, your big smile, love for St. Croix and – Hello – the FOOD…. It all just makes me happy! I’m so glad that Lisa Cantrell posted your site on Stx Memories. I was thinking that you could open an amazing restaurant in Christiansted — just what the town needs. But, looks like it might be a little too much with the legal practice, this incredible website, and maybe the rest of your life happening, too. Anyway, thanks so much for sharing all of this.
