I couldn’t really call this dessert a “Baked Alaska” in good conscience, as it is way too tropical in its flavors. Fresh lime and passion fruit carry this celestial dessert into a truly island scented heaven!
An almond-scented genoise cake serves as a base for a home-made Triple Vanilla Bean Ice Cream (Mexican, Tahitian, and Madagascar vanillas) topped with a spoonful of muscovado caramel. The lightest meringue is scorched to highlight and darken the ridges of the exterior. And it is all surrounded by dots of speckled passion fruit and lime. The lightest, airy-est, tropical-est, and gooiest treat!
I am sitting here salivating and wishing that I didn’t have children so I could make this……..

Seriously, where have I been?? LOL! this is so not fair to share the recipe for this dessert. I am pretty creative so I’m going to try making it and let you know how it turns out. I will rename it and tweek it, but love your creativity as well. Know of anywhere I can get our Island fruits close to the Carolina Mountains???
I don’t happen to know where you can get our fruits in that area. Here on the “Rock” you go to the neighbors or the farmer’s market. You could also think about trying to grow some in your area? You seem far enough South that with some nurturing you could grow more than a few of our favorites! Good luck! 🙂
